Vegetable Pad Thai

 Ingredients

8 ounces flat rice noodles
3 tbsp oil
3 cloves garlic , minced
8 ounces vegetables (mushroom, red bell pepper, carrot, zucchini) and tofu , cut into small pieces
2 eggs optional
1 cup fresh bean sprouts
1/2 cup dry roasted peanuts
1 tbsp lime juice
1/2 cup Fresh cilantro , chopped
3 to 4 tbsp Pad Thai sauce (store bought)

Method
  1. Cook noodles according to package instructions and rinse under cold water.
  2. Heat 1 tbsp of oil in a large saucepan.
  3. Add the vegetables  and fry for about 2 minutes.
  4. Add a little more oil and add the beaten eggs. Scramble the eggs.
  5. Add cooked noodles, sauce, bean sprouts, lime juice and peanuts and mix everything.
  6. Sprinkle cilantro and serve it!!
