Ingredients
8 ounces flat rice noodles
3 tbsp oil
3 cloves garlic , minced
8 ounces vegetables (mushroom, red bell pepper, carrot, zucchini) and tofu , cut into small pieces
2 eggs optional
1 cup fresh bean sprouts
1/2 cup dry roasted peanuts
1 tbsp lime juice
1/2 cup Fresh cilantro , chopped
3 to 4 tbsp Pad Thai sauce (store bought)
Method
- Cook noodles according to package instructions and rinse under cold water.
- Heat 1 tbsp of oil in a large saucepan.
- Add the vegetables and fry for about 2 minutes.
- Add a little more oil and add the beaten eggs. Scramble the eggs.
- Add cooked noodles, sauce, bean sprouts, lime juice and peanuts and mix everything.
- Sprinkle cilantro and serve it!!
